A workshop validated a collection of traditional recipes aimed at preserving culinary heritage and boosting gastronomic tourism.
Burkina Faso is preparing a collection of 40 local dishes to promote gastronomic tourism and preserve its culinary heritage. The Ministry of Culture, represented by the Director General of Tourism, Monique Ouédraogo/Ilboudou, opened a validation workshop in Ouagadougou on Thursday, October 22, 2026. This initiative aims to document traditional recipes, including dishes like kazanga, zamné, babenda, tô with various sauces, and local drinks such as dolo and zoom-koom.
The Director General stated that gastronomy is a vital part of national cultural heritage, reflecting community history, traditions, and values. She emphasized that many culinary knowledge traditions are passed down orally, making documentation necessary for future generations. Participants are reviewing the accuracy and authenticity of information on dish names, origins, ingredients, preparation methods, and their cultural significance.
This collection is also intended to diversify national tourism offerings and encourage the consumption of local products. The initiative can create economic opportunities for producers, processors, and restaurateurs. The validation process is seen as a concrete contribution to safeguarding collective memory and recognizing community knowledge, rather than a mere administrative step.
